What is the difference between the 3 Homestead site builders? Desktop, SiteBuilder Plus, and Website Builder

We've been using the desktop version for close to 10 years and would like to upgrade the entire site to modernize it but I'm not sure if it's worth trying to figure all this out with Homestead.

There are no tutorials for any of the site builder versions. I don't even have the option to use this *new* Website Builder. The only Categories are for the 'plus' and *new* versions, not the old desktop version. I've searched conversations, categories, posts, questions etc. and can find virtually nothing to answer my main question.
