I'm transferring my domain to another provider. Will my email accounts transfer over too? Email data?

I'm following all of the steps to transfer my domain name to another provider, and I'm about ready to pull the trigger. I was told to ask about whether email accounts transfer over too. I also want to know if email data transfers.
