Toggle for Product Tags in BigCommerce does not keep setting

We are adding new product and started to use the Product Tags to see how we might implement it in our store. So I toggled it 'on' in display (under Store Settings) to see it and have 'unchecked' it but the Product Tags are still showing on the couple items I have added (which now looks really bad as if I only have a couple similar products).

**Additional note...is there a place where I can edit these tags (aside from individual products). I am looking at the 'tags' page from a customer perspective and noticed there are a couple tags that have not products attached (all I can suspect is this happened during transfer and these products are already deleted but we did not have a field for tags in PS...so...a bit confused how they got there.
