The sample product "Speck PixelSkin Case for iPhone 3G" has options (Color) assigned to it, while the sample product "Apple In-Ear Headphones with Remote and Mic" does not.
Because the Speck product has options assigned to it, it does not show up in the available list of products in a Product List option, while the headphones do.
To have a product display as an option in a Product List, you will need to remove the option set associate with it. This can be done by changing the option set to "(None)" on the Options tab when editing a product. Please note that disassociating a product with its option set will not only take out the options, but also the rules and SKUs associated with those options.
Once you make this change, you will be able to add the product to your Product List option.
