Where is the option to build an HTML + CSS site from scratch?

I am using this site to show off my web development skills and add it to my professional portfolio. A template just won't do for this purpose. However, I'm having difficulty finding the option to build my website from the ground up, and it seems as though I have to choose a template. Is this possible?

To start from scratch you choose a template and delete all the elements. The developers apparently didn't factor in that many people choose to design from a blank template.

Seems as though even when I do that, I can't edit my code at all. I guess I'll have to just wait the 60 days and transfer my domain to another host

Homestead has always been built to use a Websitebuilder tool. You can use HTML and CSS on Homestead sites, but we are not really built to design a complete site using code. You can build a site and point your domain in the short term. You do not need to wait 60 days to make the site.

Well, to transfer my domain to another registrar, apparently I need to wait 60 days after changing my email address. If I create a website with another host, is it possible for my homestead domain to point to that website rather than transfer it to the other host? The only options I can find for this only allow my domain to point to a website hosted by Homestead.

Yes you can point. If you create the site somewhere, they will provide you with the needed records. In your case you would probably just use their nameservers, unless you have set up email addresses already. Once you have those, you may edit them in your Homestead account. Then, after 60 days, you can transfer or leave the domain with us.
