I updated the DNS settings at GoDaddy to

NS1.MDNSSERVICE.COM
NS2.MDNSSERVICE.COM
NS3.MDNSSERVICE.COM

However, Homestead still says "pending".  I know it has only been a day, however, in my experience this process happens pretty quick.

The real issue is that our e-mail is now down because I need to update the MX record since e-mails are still being handled at godaddy.

Is there anyway to update the MX record on account pending transfer?   The correct MX records are:
0 smtp.secureserver.net
10 mailstore1.secureserver.net

Have you tried using your Domain settings?

Yes.   I gave up and couldn't go without e-mail any longer.  I canceled everything and put my DNS back to the original setting.  I will try again during the week when support is open.

We're here now. What domain are you trying to change and what are the new records you need?
