Hi Janie:

You can do this for yourself, save your index or home page as "page one" then delete the original index page. Then open up a new page, preferably a blank page and save as index or home. When you are ready to continue with your normal page, delete the new index or home page and open the "page one" and save that to index or home. I have done this exercise a couple of times before.

You can either create a landing page like Les is suggesting, which is good because it is still a page that people can go to, so it doesn't hurt your SEO as much and it gives you an opportunity to give your site viewers information about what is happening with the site and when they can expect it to be back up.
Or, you can unpublish your site to take it offline completely. To do this, click on the site name in the top right of the builder, click on View File Manager, and select your pages. Then, click Unpublish.
