SEO Site and Page name for title & search but not the Menu

So, I wanted my page title to be a bit more detailed but as it stands right now, it's the name of my site, a - and Home, the name from the menu. So when I look it up in search engines it's like  "Name Of Site - Home" I have no idea how to add a proper title, as well as the under lying text in the search, which just seems to be some text taken from my page at random. I only see changing the "home" menu title but I doubt very much that's the way to do this. I still have no way of changing the name of site or HOME without messing up my menu.

I really need to be able to SEO my site correctly. How do I go about doing that? Please some details of where I can fix all this. Thanks

Edit- Alright, I think I found where to change the title in manage pages... Not sure about the under title area in searches or any other SEO inputs...

OK I see more of the SEO below... I believe it's all there... I'm sorry, I keep doing this.. Asking and then finding my own answers... sigh...
