Revamping my Website

I have had my website for a few years and decided I wanted to give it fresh look and REALLY wanted to be able to have a drop down menu. When I originally created my website for my child care (www.kiddykollege.com) there were so many templates to choose from and pictures that were related to the child care field AND it was pretty user friendly. 

I called a few days ago to see how I go about getting the drop down menu and was told to create a 'new' temporary domain to create a new site from and then it could be transferred. I did that and started trying to design and in the new and improved site builder there are ZERO child friendly options, when I clicked on a template I thought I could modify the level of confusion went from 1 to 10, I click on a picture and there is no option to 'change' the picture other than the prechosen pictures that go with the original theme of page. The new sitebuilder is very confusing... Is there an article with tips on building on the new builder? Is there a way to start from scratch?
