If I save my pages and not publish, can I come back to them later?

Most Definitely! and if you want to see the published version but keep the Search Engines from indexing the site until you are ready to go live you can add a snippet of code to any page or pages that tells them not to index or follow. The key though is to remember to remove the code once you are ready for the public and the Search Engines.

Here's how to add the code in SiteBuilder Desktop version:

For Plus:
Click on Page Settings
Click on Advanced
Insert the code in the Add HTML & Javascript box

DON'T FORGET TO REMOVE IT WHEN YOU ARE READY TO GO LIVE!

I see that you're using Sitebuilder plus, so just to add on to what susan2829 suggested:

Adding HTML to the header of your pages:
Page Settings > Advanced

Adding HTML to the body of your pages:
+insert > more > html

*you can login and edit/save your work as often as you'd like and click the publish button whenever you're ready to go live.
