How can we calculate shipping for each or full cases of same product.

We sell most products with the option to purchase one item or at a discounted case price. The each/case is set up as an option. How do we get the shipping to be calculated for each of those options?

You will create rules under the options for that selection. If you are using weight as the shipping calculation, then the rule can adjust the weight of the case for shipping.

How are the dimensions handled when I select a different weight for choices in an option? If it uses the dimensions from the default or case pack, then UPS will charge dimensional weight fees. For instance if I sell 10 gloves and the shipping is calculated on the size of 10 cases, even though the weight is low, UPS thinks the package is huge and will charge accordingly.

Could that explain why the shipping charges come up the same if I select 10 each or 10 cases?

I am using the case pack weight when I set up the product so that is the default correct? Then I set a rule to change the weight in the each option. However when I test this by going to the check our phase with test orders, I get the same freight amount for buying 10 packs or 10 of each. I am not sure why this is happening.

I'm a little confused on exactly what you are doing, but, if you sell the items both individually and by cases, then you may want to add the case quantity as a second item, or if you decide to just use the options so customers can order variuos quantities, then you may need to create rules as Drew stated above.
