How do I shrink text on the "mobile" editor?

You can click on the text element and then on advanced. Go to style and enable the custom style. Click the gear to the right of the font and you can adjust the size. If you have edited the font size in the desktop site, you will not be able to do this on the mobile site. The developers are aware of this and working on it.

Can I trick it by hiding smaller words underneath my content then erasing the upper layers on the mobile editor to reveal the correctly sized text beneath?

You can hide elements in the mobile only, so you might be able to, but I have not tried this specific use.
