I'm transferring my domain from Homestead to another host, but I also get email through Homestead.  Will my email service be disrupted by the transfer?  If needed, am I able to transfer  the email records to a new email service?

It is likely the new provider will change the nameservers when you transfer, so mail will be disrupted. If you want to use email with the new host, then you will be able to set up the same mail boxes, but you can't transfer the email boxes from one service to another. You would need to use a program like Outlook and POP the messages to your computer if you need to save messages.
