You can go to the domains tab and click the Change domain association link. Select the desired site from the drop down and save it. It can take up to 20 minutes to complete.

So to be clear, I created a new website using the responsive templates, named it MMGTest.homesteadcloud.com
I want to replace my old site, www.meetingmanagementgroup.com with the new one. I don't understand if I do a name change, domain association, or both.

Ok. If you want the domain http://www.meetingmanagementgroup.com/ to bring up the new homesteadcloud site, use the domains tab to change the site association of that domain.

Don't mean to be dense, but by doing this, the new site, MMGTest.homesteadcloud.com willl automatically be renamed meetingmanagementgroup.com and show up as our domain website.

I just had a bad experience last week with ICANN putting our website on hold and am overly cautious.

I understand. Yes. You have it exactly correct. It might take up to 20 minutes from when you change the association. To assuage your fear a little, this action will in no way trigger an issue with ICANN.
