I have several applications that my residents need to submit. I have converted these to fillable forms for ease, however, when filling them in and trying to submit to the email the filled in data is not there.

What page is a form on? You receive an empty email?

I put the forms on a contact us page and was assuming that since I converted the pdf to a fillable pdf that when it was being filled in and I copied it, could attach to email and send.

I see. With pdfs, the visitor opens the form and should be able to fill it out and print it. Then they can scan and email it or mail it to you. Unless the pdf has a submit option built in.
Our forms do not submit pdf documents. You can make a custom form. Keep in mind that the submit button will send the data from ALL forms on the page, so each form needs to have its own page.
