If I use my URL through another hosting service, can I still access my Homestead site files as long as I am paying the monthly fee?

The files will stay there, but the URL will change. Currently, you have the Homestead site bringing up the Homestead site. So the images are now at www.yourdomain/image.jpg. If you set the domain to bring up a site at another host, then these files are no longer at www.yourdomain. They are at sitename.homestead.com/image. You could add a CNAME on your domain, pointing to the sitename URL, like images.yourdomain. In this case, you could access the images by images.yourdomain/image.
Does that make sense?

Yep. That makes sense. What about e-mails? Will I lose those when I move the domain?

If you point the domain using A records and/or CNAMEs your email will not be affected. If you change nameservers then you would have to update the mail DNS records at the new how to maintain your email, or you would lose it and start with new boxes at the new host.
